Broccoli Cheddar Soup
Broccoli Cheddar Soup
Yield: 4 Servings Prep Time: 30 min Cook Time: 1 hr
Ingredients
- 2 heads broccoli
- 5 cups chicken bone broth
- 2 cloves garlic
- 1 cup heavy whipping cream
- 1 tsp xanthan gum
- 1 tsp smoked paprika
- 1/8 tsp cayenne pepper
- 8 oz shredded cheddar cheese
Procedure
- Brown broccoli florets in oil in dutch oven in batches. Salt as you go.
- Remove broccoli to cool.
- Brown onions in butter in dutch oven. Salt.
- Add garlic when almost done browning onions.
- Add a little chicken broth to deglaze pot.
- Add remainder of broth and broccoli back into the pot.
- Simmer until broccoli gets tender (30 min?)
- Add cream, paprika, and cayenne (and black pepper)
- Carefully sprinkle xanthan gum slowly to avoid clumps
- Simmer until thickened (30 min?)
- Add shredded cheese.
- Salt to taste.
