Broccoli Cheddar Soup

Yield: 4 Servings Prep Time: 30 min Cook Time: 1 hr

Ingredients

  • 2 heads broccoli
  • 5 cups chicken bone broth
  • 2 cloves garlic
  • 1 cup heavy whipping cream
  • 1 tsp xanthan gum
  • 1 tsp smoked paprika
  • 1/8 tsp cayenne pepper
  • 8 oz shredded cheddar cheese

Procedure

  1. Brown broccoli florets in oil in dutch oven in batches. Salt as you go.
  2. Remove broccoli to cool.
  3. Brown onions in butter in dutch oven. Salt.
  4. Add garlic when almost done browning onions.
  5. Add a little chicken broth to deglaze pot.
  6. Add remainder of broth and broccoli back into the pot.
  7. Simmer until broccoli gets tender (30 min?)
  8. Add cream, paprika, and cayenne (and black pepper)
  9. Carefully sprinkle xanthan gum slowly to avoid clumps
  10. Simmer until thickened (30 min?)
  11. Add shredded cheese.
  12. Salt to taste.
